So the good people at Alinea are opening a new restaurant. This is exciting news. Because it's the same people behind Alinea it does mean, however, that it will not be normal. To wit: there won't be any reservations, only "tickets" for your meal, the cost of which will vary depending on the time and day of your dinner (i.e. Saturday at 8:00 will cost more than Wednesday at 10:00, but it will never be greater than $75 for a 5 or 6 course prix fixe. Genius.). Furthermore, the menu will change four times a year, and will focus on on the cuisines of specific times and places (i.e. Rome 1952, Paris 1921 and, wait for it... Hong Kong 2038.). I think I may goat-faint.
